Pop's Flaming Profiterole Pyramid

Bake375°F  ·  50 minutes
1C. Boiling Water
1/2C. Shortening
1/2tsp Salt
1C. Flour
4eggs
2pts Ice Cream - Choc Sauce &/or Raspberry Sauce
Method
1.Combine water, shortening & salt in saucepan. Bring to boil. Add flour all at once. Stir over low heat 1 min or so until it leaves the side of pan & forms a ball.
2.Remove from heat & continue beating.
3.Cool slightly - Add eggs - 2 1 at a time beating after each.
4.Drop from Tbsp onto ungreased baking sheet abt. 2" apart. Make 16 - Swirling es. as if snipes
5.Bake at 375°F - 50 min.
6.Remove from heat - make a small slit in ea puff to let steam out.
7.Cool on Rack.
8.Serve filled w/ ice cream - try w/ choc sauce &/or raspberry sauce.
9.Can mella a good Pyramid & place warm brandy over - Flame & pour over

I'll never forget the night Pop arranged his homemade bread and cabbage creation into that impossible pyramid, then dramatically lit it aflame right at the dinner table—we all gasped, then laughed until our sides hurt. He called it a 'profiterole' with that mischievous grin, though it was really his savory-sweet masterpiece of tomatoes, vinegar, and love. That meal tasted like pure joy, but what I remember most is Pop's eyes twinkling as he watched us devour every last bite. Some recipes feed your belly, but this one fed our souls.
